What do you most enjoy about this industry?
The buzz of a busy service, I really enjoying teaching and passing on my knowledge to my team, though it is not a one-way street. Guests coming in and enjoying themselves, that leave wanting to return.

What does a typical day look like for you?
My day starts at 7am where I check all reports, and arrive into work at 10/11am. I then check revenue, and guest feedback from the previous day and create a to do list, carrying over any outstanding actions from the previous day.
I then check daily reservations for the week ahead, also review details of any upcoming events, maintenance or staff training required. I do not always do the lunch shift, but I always do the pre-shift briefing and dinner service. At the end of the shift, I may do some more tasks before I leave at about midnight.

Tell us something we might not know about the sector?
It is immensely rewarding, and for me what brings joy is a guest leaving happy, wanting to return and posting great reviews. As long as you are passionate and enjoy what you do, you get rewarded. The pay can start off low, but as you climb you can end up with a good package.

What has been the single most important piece of advice given to you?
Do everything with passion, the day you lose that passion is the day you should leave the industry.

Last documentary watched and book read?
The last book was ‘Point Blanc’ by Anthony Horowitz. I bought it for my boys, and they don’t want to read it, so I did!
